- Prepare 1 lb of Frozen chopped spinach.
- Prepare 1/2 cup of Finely chopped yellow onion.

- Prepare 1/2 cup of Celery (diced).

- Defrost spinach - press out all liquid in colander.
- Heat butter over medium heat - toss in chopped onions, mushrooms, and salt/pepper to taste.
- Sautéed veggies until liquid has evaporated & onions softened.
- Purée (in blender) coconut milk, parsley, and celery.
- Pour purée over ground beef in a large bowl - add chopped spinach, coconut flour, garlic, measured salt/pepper, nutmeg, eggs (beaten), and mushrooms.
- Combine all ingredients by hand.
- Form mixture into patties.
- Fry in olive oil or cook on grill. Can add marinara sauce as topping if desired.
